So you're traveling through northern Italy, hitting the top wineries, and soon you're saying to yourself, "gosh, the process is all the same, maybe I should try something a little different!"

I have one word for you: Grappa. Yes, the push to modernize the production of Italian wine has resulted in a sort of grappa Renaissance. With grappa distilleries getting loads of great skins and seeds to distill, the formerly colorless firewater known as Grappa is taking on a tawny hue and finding its way into elegant bottles. It isn't grandpa's grappa any more (but you can still dribble a little in your morning coffee to "correct" it).
