I've wanted to get over to Iceland for a long while, if only to shake somebody's hand for the way they handled their country's banking crisis--by prosecuting (some) bankers and bailing out ailing homeowners, the reverse of how we've bungled the process in the US (Fighting the Recession the Iceland Way).
Iceland's economy is now doing ok. So, evidently, is their cuisine. Jody Eddy plans on hosting a culinary tour of the island in 2013:
