The Town of Saint Lizier is quite interesting, visit the walled ramparts, the church of Saint-Lizier, and the Bishop's Palace (with museum).
Mirepoix has an interesting main square. You can feel it's medieval underpinnings. A great place to stop for a coffee if you're just passing through.
Foix has a castle that overlooks the town and an interesting market square.

If you are traveling east along the coast, a stop in the walled city of Carcassonne is recommended [ pictures, links ]. The region is a short drive to the Basque region [ links ] (to the west and south). You might want to check out the Goggenheim Museum in Bilbao, Spain. For those interested in visiting other caves, the Dordogne region to the north is recommended, or the traveler can go on to Spain and the northern region of Cantabria, where the famous Altamira cave is located.
