Torta di Verdura and its cousin Torta dell'erbe are staples in the Lunigiana

Sometimes you come to festivals (or, in Italy, Sagre) to celebrate and eat real, traditional food. Then again, at what point is the photographer involved in the documentation of fading traditions, becoming a sort of visual anthropologist?
