The village that produces lardo sits amidst marble quarries prized since antiquity.

A memorial to marble quarry workers in Colonnata. In the village, the famous Lardo di Colonnata is produced. Although it sounds awful, the spiced, cured lard is quite good. It is produced by placing copious amounts of coarse salt in marble vats with the lard and spices in order to cure and preserve the lardo. Lardo was the perfect fuel for marble quarrymen who worked the nearby hills. Colonnata is, in summer, divided between these rugged workers and the tourists who flock for the views and tastes of the famous lardo.
