Kostas, Youra Island, Greece. Here, Kostas is explaining the process of moving to the island to protect the special species of goat found there. One of the problems in moving was that a batch of starter for the bread that would be baked in the wood-fired oven had to be produced. Actually, there was no problem making the starter, except for the fact that a virgin was required (no non-virgin was allowed to even touch the starter as it was being made). A niece had to make the dangerous sea crossing to tend to the process. That same starter is being used many years later.

Kostas and his wife had planned to retire after we left the island. He had saved enough money for a nice house and land after working on Youra for many years, without running water or toilet.
