Making Panigacci
Panigacci are traditional flat breads found in a very small area of Italy's Lunigiana region. The domed terra cotta "molds" for making the flat bread called testi sit over a wood fire while the cook prepares to make a stack. The next picture shows how the testi are used to prepare a batch of panigacci. The dish is said to have originated in the village of Podenzana.
