In Borgo San Frediano, across the Arno south of the train station, you can get a panino di lampredotto, or lampredotto sandwich for €2.70. Order it with a green sauce or a picante sauce--or you can have both. You get the roll with a ladle of broth to soften the insides, a helping of lampredotto, the sauce of your choice and it's all stuffed into a plastic bag. Believe me, you'll need the bag.
Lampredotto is like tripe only lower off the cow. While tripe, or trippa, is the first stomach, lampredotto is the fourth stomach. Just wanted you to know.
The sandwich? It was great. The stuff melts in your mouth. Really.
